WebI went into Device Manager and rolled the Intel(r) Iris(r) XE Graphics driver back to version 31.0.101.3616. I'm afraid I didn't capture the version number of the driver that killed the monitors. Then I plugged the Vioteks back into the dock, and they are working fine again. I typed all this to document it. If you want to try it out, just go to the Intel Download Center and choose the driver version you want. Mind you, just because it worked for me doesn't mean it would work for you. BTW, resetting your pc doesn't work, atleast for me, in case you gonna try that out.
